Recipe for Tarte Tatin: Tarte Tatin is an upside-down apple tart in which the apples are caramelized in butter and sugar before the tart is baked. Tarte Tatin has to be made with firm dessert apples: cooking apples will not do as they mulch down into a purée. In North America, Tarte Tatin is typically made with Golden Delicious apples, which are not the type used for American-style apple pie.

1. Beurrer un moule a bord haut. Saupoudrer celui-ci de sucre. Eplucher les pommes. Coupez celles-ci en gros quartiers et les deposer sur la partie bombée.
and in English:
1. Grease a high-sided tart mould. Sprinkle with sugar. Peel the apples. Cut them roughly in quarters and place on the bottom.
