Madeleines are wonderful golden tea cakes with a mounded top. Madeleines were famously described by Proust as "seashell cakes so strictly pleated outside, yet so sensual inside". Those madeleines will prove just as delicious dunked in coffee.

History tells us that madeleines were named after a young serving girl who, in 1755, so impressed Polish King Stanislas Leszcynski with her baking skills at his Chateau de Commercy, that he named them after her. Her name, of course, was Madeleine.
