Madeleines have been heightened to celebrity by writer Marcel Proust. In his novel In Search of Lost Time, Proust describes the memories produced by the scent of a Madeleine at tea time: "... little cakes called "petites madeleines", which look as though they had been moulded in the fluted valve of a scallop shell... An exquisite pleasure had invaded my senses, something isolated, detached, with no suggestion of its origin."

Anyway, our Madeleines are hand-made by French Chefs with fresh eggs, fresh butter and unbleached flour. They come by 2 in cello bags (6 cello bags total). Keep the Madeleines in their bag where they will remain fresh and moist for a week.
