Sherry vinegar, a gourmet wine vinegar, has a delicious sweet and sour taste, similar to but more flavored than balsamic vinegar. Although it was originally "discovered" by French chefs ("Vinaigre de Xeres"), sherry vinegar is produced in the Jerez, Spain region.

Vinaigrette made with this sherry vinegar is particularly flavorful and matches well with many foods like salads, steamed asparagus or globe artichoke for example.
