
The Sabarot green lentils grow in the volcanic soils of around the town of Le Puy. They are well known for their dietary and culinary properties. They provide vegetable proteins, fibers, minerals and are naturally poor in lipids. They are delicious in warm lentils salads, hearty soups. A traditional French dish is "saucisses aux lentilles" (sausages with lentils).
The Le Puy lentils are said to be the "best in the world", they are known for their unusual coloring, dark green marbled with blue and very fine taste.
