
Green flageolet beans, also known as green kidney beans, were first produced by chance by Gabriel Chevrier in 1872. They are grown in the Arpajon region, in Brittany, and in Central France around the Le Puy region .They are harvested in August and September before they have matured. They are known for their delicate flavor and pale green color.
They are a perfect accompaniment to meat dishes, especially lamb and spicy merguez sausages. They are delicious in salads and soups. They are so tasty cooked in duck fat!
